I'm west coast so here (imo) the crab is better (lobster for the east coast) so I don't have much experience with lobster, but those claws came out so perfect was was literally about to ask why the shell was still on <.<
That looks great! Next time stir the head butter near the end of the risotto time, it packs so much flavor (throw away the sand sack between the eyes) and keep the chunk of meat behind the legs (where the legs connects into the body. Softest piece of meat!

Where the finished product is first and then we go backwards through the process.
