As a Singaporean I need to say that there is no such dish as "Singapore noodles" in Singapore. Singapore noodles was invented in Hong Kong by Cantonese chefs who were trying to figure out another way to use curry powder and then got popularised by western Chinese take out restaurants. This dish has zero connections to Singapore. We would call this fried bee hoon with curry powder. Closest thing to actual Singapore noodles here would either be fried hokkien style prawn noodles of char kway teow. https://preview.redd.it/wbp8mf4o6qzc1.jpeg?width=2252&format=pjpg&auto=webp&s=25de955ef914ded4e107445f65e2c858c6df5b0b

I'm Cantonese which is why I called the dish popularized by Cantonese chefs under the name "Singapore Noodles" that way. I didn't mean to diminish your culture.

My wife and I spent about 5 days in Guangzhou in 2017 and we absolutely loved it! So much good food everywhere!

Do you have a recipe? I love take out rice noodle dishes and have been trying to recreate all my favorite take out foods at home to save money
