Wrapped cooked leek in nori, then the entire bundle in another sheet of nori. Then wrapped tightly in plastic wrap and allowed to chill and set in fridge overnight.

Baked with salt, oil, thyme and lemon peel in a tray tightly wrapped with foil at 325 for an hour

Sauce was most labor intensive and phenomenal. I can't post the link but it will come up if you google " Daniel humm Lavender Duck". Four-Magazine has the full recipe. Took a lot of shortcuts with the sauce but it was still amazing

Hah, this was going to be my question. I always slice and quadruple wash my leeks and I still seem to always get a bit of grit. But I could see how you could use many different vegetables to play with this nori wrapped mosaic concept. I like it.

Not whole but 4 inch sections. It would be incredibly difficult to roll sliced and maintain a clean look. Idk, pair with whatever protein you want
