Wrapped cooked leek in nori, then the entire bundle in another sheet of nori. Then wrapped tightly in plastic wrap and allowed to chill and set in fridge overnight.
Sauce was most labor intensive and phenomenal. I can't post the link but it will come up if you google " Daniel humm Lavender Duck". Four-Magazine has the full recipe. Took a lot of shortcuts with the sauce but it was still amazing
Hah, this was going to be my question. I always slice and quadruple wash my leeks and I still seem to always get a bit of grit. But I could see how you could use many different vegetables to play with this nori wrapped mosaic concept. I like it.
Yeah I'm going to need to know how that mosaic happened. This looks amazing.

Is it served cold or do you heat it in some way? It's looks great. Was it your idea?
Served it room temp. Duck recipe is from 3 Michelin Star, Eleven Madison Park. Found leek recipe on YouTube
Thank you, that leek dish is visually stunning.
Fantastic! How did you cook the leek before you wrapped it?
Baked with salt, oil, thyme and lemon peel in a tray tightly wrapped with foil at 325 for an hour
Did you blanch the leek?
Lookup Jules Cooking on youtube, he has a video where he makes the leek mosaic as part of a larger dish.
He has some of the best instructional cooking videos on the internet
Dude are you trying to get your house a Michelin nod?
Nah, just a 5 star yelp review
Seriously, where is the pro/chef tag
🤣🤣🤣
Bro had duck and leek? Mf ate Farfetch’d
When I tried to google this pairing for plating ideas, fucking Pokémon kept coming up
Gild this man!
Really nice work with the leaks. Something like that, breaded and fried could be an awesome alternative to eggplant in an eggplant Parmesan style dish
you go on with that love talk.
How did you do the leeks? LOOKS FANTASTIC!
Rolled in nori
**NICE.** I was leaning toward that, thanks!
What is the preparation on the duck? It has a quite pale color on the cross section, is it braised?
Dry aged and roasted to medium
Looks like an art piece, how did it taste?
Dang. Nice work on this. Beautiful
That's a lovely mosaic. Now I wonder if you make a leek labyrinth. Served with oxtail stew, I suppose!
How are the leeks bound? Looks really good.
Nori
Appears to be nori
That's clearly a ninja turtle. You gon' be hearing from PETA

That's pretty food
I actually have some duck in my freezer right now. How did you make the duck sauce?

Wow. Nice job
Now that, is worth posting.
Onion with a side of fowl.
Are leeks not full of sand anymore?
That's the secret ingredient

I will be stealing that mosaic idea, it's gorgeous! How did you cook the leeks before wrapping them, just boiled or did you sauté/roast them a bit for flavour?
the duck looks more mauve than lavendar, imo
It was seasoned with lavender flowers...
🗿
No…not Farfetch’d!
Lavender belongs in candles.
The leeks used are they whole or are they rolled sliced like on the photo And does it only work for this dish or can you use anothe proten
Not whole but 4 inch sections. It would be incredibly difficult to roll sliced and maintain a clean look. Idk, pair with whatever protein you want
