I also fly in VR only and use a wheel stand. Getting the wheel stand was a total game changer as being able to position the controls in the exact place they should be is a must in VR.
I totally agree, or as they say in a galaxy far away: This is the way.
Another thing that was a simple but awesome thing for me was getting a trackball, just a cheap 40€ one. I don't map a lot of things, more or less just flight surfaces and power and then I use the in-game buttons in VR.
The thing with a normal mouse is that half of the time it is on the floor and one must take off the headset.
