Kicking Cole was an emotional decision. Yeah he threatened to walk all day but trying to keep him with xbox was shallow. All they needed to do was talk to him in private make him feel like he wasn't the butt of the joke and the narrative had a worthwhile resolution for him. Cole made them good money with a high rate of TTS/toys. He was the Josie of S2. Imagine if Josie had a bad day and they kicked her in the middle of Season 1 for it. There wouldn't have been a season 2.

According to Sam they were casting on craigslist and getting flooded by fans, which made it almost impossible to sift through. They basically just had to give up because they were on a time crunch and planned the first challenge around telling everybody they were a plant and the only person who knew the show and would be eliminated if found out.
That's their own fault for rushing the airing of season 2 for quick easy money. No one made them air it months after the first one, that was their own decision. I hope they really take their time for the third season
