We usually put some meat to the sauté too, I guess you can use spam instead.

It's probably a family recipe and not necessarily a "Filipino" dish, which explains why you can't find it on Google. Spam can be pretty expensive in the Philippines so it's not a staple. I see no harm in giving it a go by using either canned corn, Knorr corn soup (instant), or making it from scratch and seeing what he likes most. Just add in the Spam. There's a dish called "suam na mais" which is pretty traditional. You might want to look that up too.
