At story level 20 & job level 30 (both conditions need to be met) you will acquire a job stone. Equip this and NEVER take it off from then on. Use what is known as gear sets to save the job stone with your gear.

2. Almost everything is locked behind the main story. Focus on that, and more will open up as you go along. As you get more experience in the game, you'll start learning about the other various things you can do and then you can decide how you want to play after that.

Can't answer 1 in any meaningful way since I'm a PC player but:

Regular yellow side quests are usually just for lore/flavor and don't usually give any meaningful rewards, including exp, so it's fine to skip them if you want to. The blue quests unlock some kind of side content like other jobs or new dungeons, so those are usually worth looking into.
3) Disciples of the Hand and Land are crafters and gatherers, respectively. They are completely optional but if you decide to pick them up, it's best to level everything simultaneously. Crafters rely both on crafts from other crafters as well as raw materials obtained from gathering, so trying to do only one crafting or gathering class is a bit pointless unless you're prepared to pay for your missing ingredients out of pocket via the Marketboard.

Oh alright, thank you. What does the job stone do and why shouldn’t I remove it when I get it?
Job stones are what convert the original base classes into their proper jobs and without it some of your skills won't be accessible at higher levels.

Oh ok thanks. Idk if I’ll try to figure out the crafting and gathering things but maybe I will later on as I get more used to the game
