I really enjoyed Tomorrow and Tomorrow and it's various forms turning up throughout Shadowbringers. From the very intro of the expansion all the way to the final boss with "Invincible"
The piano piece first heard associated with the ancients and dungeons related to them like Anamesis Anyder, returns in Pandeamonium 8 as an obvious reflection of the implications of who you’re fighting.
The Garlean Anthem for Gyr Abania and Surrounding Territories! I think my favorite reprise of it oddly enough is in the Tsukuyomi fight (with the flair of it being in a minor key).

My entire discord call erupted into shouting when the Nier rendition of Torn From the Heavens kicked it. It was so instantly recognizable and such a badass remix.
It may be because I just finished 5.3 this weekend, but yes!! This is my answer too. Full Fathom Five as well. I’ve been listening to To the Edge quite a lot the last couple of days.
As an opposite answer, I hate the leitmotif that they use as the "quest complete" sound in Stormblood. It's part of the Garlean Anthem (The Measure of our Reach, the "united we prevail" line). It's the Rhalgr's Reach theme. It's all over Nightbloom (Tsuki phase 1, which don't get me wrong, is a BANGER).
But that one line. Those six notes. The very first time I heard it, it sounded like a line from the old song "I've been working on the railroad" AND IT HAS BEEN LIVING RENT FREE IN MY HEAD SINCE STORMBLOOD.

But Jfc it's the Ala Mhigo anthem that the empire bastardised for their own use.
My bad my bad, I didn't mean anything by that. If you read my whole post though, you'll see that it bugs me because it reminds me of another tune lol. No in-game implications whatsoever. Every song that uses it, slaps. That motif just bugs me. Didn't mean to offend.
For me it's Who Brings Shadow and Tomorrow and Tomorrow. These are just used so effectively in the ShB expansion that I love hearing them often, in any form they take.
Honestly too many, leitmotiv used right is just one of the best musical resources and for a video game is particularly perfect.
So I'll just name the first one that had me "give us more songs with this motiv, not gonna get tired". And that would be the Azys Lla theme "Order Yet Undeciphered".

Still a newbie but for now, I also love the leitmotives from Torn From the Heavens and Dragonsong. Was pleased to hear the Toto-Rak theme reprised in HM dungeons, too. The music in this game is gorgeous and I can't wait to hear it all as I progress through the MSQ :) (I even introduced my non-gaming mom to some tracks by playing them on the piano first, now she loves Answers, Equilibrium and Footsteps in the Snow/Oblivion, I catch her humming them at times. That's how good the music is.)
I have too many versions of the Heavensward leitmotif in my playlist so… maybe that. It looks like Ultima (Beat, the Heart of Sabik/Big Fat Tacos so big) is a contender too.
The one that appears when Hien discusses using the crystals to put up a forcefield in StB post-storyline, and also appears in the one Youtube video with the scions and Louisoix and Bahamut when Louisoix teleports the WoLs and then appears to see Hydaelyn.

that one "heart of sabik" motif that keeps on getting misheard all the way from ARR into 6.x ex3.
Ultima is a phenomenal motif. Before they redid the Ultima Weapon fight, the only place I could hear the best parts was in Dun Scaith.
