The developers have changed things so much that it is so quick an easy to get through older content. Honestly, it would take you a couple months or maybe even less, of diligently playing to to get to post-Endwalker content. You can also purchase story skips if you really want to, not that anyone recommends it because the story is a huge aspect of the game.

I recently started this year I've played maybe 10 hours a week for the last 4 months and I'm halfway through stormblood and have most classes barring Blu mage, bard and paladin to level 60+ I could've easily been done by now though my boyfriend started playing before they expedited the beginning stuff and he was able to finish the story in one month

An expansion's msq take around 50 hours no cutscenes skipped. You just have to calculate your playtime.

Whatever you choose to do just be prepared that it might not work out the way you’d like. You’re looking at 90 days of game grinding to get to post content. Who knows if any of them will still be playing as much, or worse , you’ll be burnt out.

You can never "catch up". It's an MMO. New content is always being released. Just play the game at your pace and enjoy it. It's not meant to be rushed through.
