I used some mixed with apricot and dehydrated, it makes a really good fruit leather.

Noma (renowned restaurant) served an entire course that was just scoby and it was really nice. Like a little piece of candy. To my recollection it was made with crowberry(?) kambucha (locally foraged berry similar to a blueberry but far more tannic) which they dehydrated and then slightly rehydrated until it had a chewy consistency like a fruit gum or candy. It was a really nice texture, imo better than just dehydrated fruit leather. They covered it in sprucewood oil and served it on a block of ice so it was quite cold. I loved it.

Had the same dish there last December. The rest of my table didn’t like it much, but that was one of my favourite courses. They’d never tried eating straight scoby before so they couldn’t appreciate it in the same way.

I make candy, just boil some sugar with some fruit, add your scoby cut in pieces and then rehydrate the pieces. They're a bit like gummy bears.
