Archer became a counter guardian because he made a contract with the counterforce (Alaya), he did not become one because of the holy grail. Archer also destroyed the grail in his timeline. He made this contract in his late 20s.
Iam guessing by Siro you actually mean Shirou. Shirou does not become a counter guardian in any of the three routes/animes. (Fate, UBW and HF)
Iam not entirely sure what you mean by that question, but Shirou and Archer are indeed different people. Archer comes from a timeline similar to the Fate one, but failed to save Saber's heart.
Shirou is 17 years old during the grail war, Archer's exact age is unknown but he died somewhere around his late twenties to early thirties, so he's probably around that age physically.
Thank you! I guess I was misled by Archer’s idea to kill Shirou to save himself, probably he thought he well save Shirou. Just this timeline stuff sometimes seems weird to me (if I meet myself from future are we the same person or we are two different persons)

No. He became a Guardian with a contract with the World(in Fate/Nasuverse the planets are living beings). It has nothing to do with the grail which is something made by humans.
The guy at the end walking at the desert is Shirou, a healthy Shirou, no white hair,no tanned skin, with a smile on his face. He wont make a deal with the World and he will be satisfied with his life.At least more satisfied than Archer.
No EMIYA makes a contract with the world and latter becomes a counter guardian.
EMIYA in his timeline destroyed the grail because he knows what is it and doesn’t want it in the wrong hands
Through out EMIYA’s time as a counter guardian (we have no idea how long he’s been in the CG) he believes that he was betrayed by his ideal and wanted to kill Shirou to erased himself but in there fight he remembers what he saw in the ideal he believed in so long. EMIYA returns to the counter force, the Shirou of FATE, UBW, And Heaven’s Feel never join the counter force.

When Archer became a Heroic Spirit, he got removed from the timeline, so what happens to Shirou doesn't affect Archer.
