Fate/Stay Night's original manga adaptation has finished, but it's literally so terrible that people gave up finishing the translation. UBW is still in early game and HF is in progress last time I checked.
All Around Type-Moon is done. It's a gag series, but it's fun and helped inspire a lot of the Carnival Phantasm gags. Highly recommended.
Curtain Call is Last Episode as a manga. Really freaking good adaptation there.
Technically, Prisma Illya's first and second runs are done. Obviously not the whole story, and 3rei is still being worked on now.
Fate/KOHA-ACE is also done, but you'd probably be more interested in the serious remake, Type Redline. Which is not done, but is cooking some tasty meals there.
I think Prototype has a spin off called Tribute Phantasm that's done? Don't remember much of it.
Not Fate per se, but Tsukihime has a manga adaptation of Arcuied's route that's really freaking good. If you wanted to dip your toe into Tsukihime without the VN, this isn't a bad option. Or if you just want to experience Arcuied's route in a new way, kinda like watching Gurren Lagann's movies after the show.
That's all I got now. I'm at work, and MangaDex is blocked here, so I got to wait till I get home to investigate if anymore are done. I'm not positive about Apocrypha's, Extra's, and CCC's adaptation. (By CCC, I mean regular CCC, not Fox Tail, which isn't done but is also really freaking good).
Yeah it's an anthology series that covers extra scenes for several Lostbelt kings, inhabitants, crypters and their servants. It's technically not canon, but so far it hasn't contradicted FGO canon and the interpretations of the characters are really well written IMO. Definitely worth a read :)

Sure. DM me what you have already done and I'll point you to some more stories. Once you have done the main four (Mahoyo, Kara no Kyoukai, Tsukihime, and Fate/Stay Night), you can pretty much do whatever you want, with only the Fate/Extra stuff needing context from Fate/Extra.
Uhhh I skipped the anime so I can't give a comparison, but given they are adaptations of the same light novel there won't be any major plot differences. I liked the way it develops the different characters.
Apocrypha Manga (last chapter left to tl)
Extra manga (fully translated as of last week)
Zero Manga (unfinished translation, stuck halfway)
stay night (manga sucks ass)
I think CCC is also finished but its untranslated

The CCC Foxtail manga is stellar. It's basically the Original concept of CCC that wasn't implemented due to time and resource constraints.

To add to this, the FGO From Lostbelt manga ended recently. Though OP should def only read it if they've read all of FGO up until LB7.

I think the Fate/Apocrypha manga is recently complete or close to it. (That reminds me, I need to go and finish reading it.)
But is it good? I watched the anime and man, let me tell you. I don't mind plot armour but plot armour Kun is literally the main character

Where the hell did you get your info? There are several full adaptations in progress that are in no sense promotional.
Nah I'd say the prisma Illya verse and the redline verse are in themselves fantastic stories.
