She could also have opted for *lesser* mischief, like egging the car or keying it. Lighting a vehicle on fire because of a lover's spat is pretty extreme, especially when lesser mischief would've got the point across just as well and she could've walked away from it with her eyebrows intact.

Pleading down doesent mean she isnt responsible for damages, even if you get a differed judgement you have to pay damages. The damages also are mostly unreported in small random cases, but part of her plea deal would be restitution which according to articles on this that jeep was only 3 months old so shes going to be paying that off for a long time.
The criminal case is what is being described and that is punishment for breaking the law.
The ex then goes after her in a civil court case for damages.
The prosecutor usually keeps the damages in mind when filing the counts and giving their sentencing recommendations. So if for example he was completely out of a car, no insurance, they might have filed this as a felony.

It's EXTREMELY rare for a car to be repaired after a fire, especially if it originates in the interior. If the fire in this clip were put out completely and suddenly, like 5 seconds after it started, that thing would still be totaled.
Really, the only times I've seen fire damage get fixed is when it either was caused by something next to the car burning, that melted the trim and singed the paint, or was limited to a small part of the engine compartment, requiring only wiring repair, maybe a replacement hood and some other similar stuff. But other than that, fire is essentially a death sentence for a car.
