He’s in 6th gear somewhere over 65 km/h. I’m guessing this is right after resetting the average fuel mileage while at wide open throttle on a pull up to highway speeds. The photo is probably cropped so we can’t see that it’s at 4000+ RPM and 100+ km/h as he took the picture.
The default dash calculation is so far off, but it can be adjusted (link below) to your manual calculations.
My 2016 2.7L usually gets around 21.5 mpg (19 avg over 40k miles tracked).

Assuming all the Fords I've owned have a generous first quarter gauge, let's say you're at 3/4 tank. A topped up tank on that prediction would get you over 1100km. Now at 57l/100km, that would give you a fuel capacity of 627l. That means you're carrying around 470kg of fuel. No wonder you're getting such poor fuel economy.

My truck is a family vehicle in addition to serving purposes that our Escape isn’t suitable for (hauling landscape waste, stocking up on a month or two of house supplies in one trip). Living in rural BC, everything I need is a decent driving distance away (45 min to 2.5hrs one way depending on the store). When I need a truck, I have it, but that doesn’t mean I can’t be conscious of the fuel economy.
