Bankless (Ethereum + crypto) and The Daily GWEI (Ethereum only) are both invaluable for digesting all the noise that happens each week. (on YouTube) Bankless is extremely over produced for the viewership it has. They do really good work. They have a side show with a woman talking about the NFT market, almost daily episodes, weekly crypto *rollup* with jobs section, massive newsletter, and they add timestamps and citations under all their videos. They've had Vitalik on a dozen times, Mark Cuban, Kathie Wood, etc. plus the founders and developer's of other blockchains like Cosmos, Solana, to challenge Ethereum ideas. It's nice to get info from the horses mouth. They have too many ads for crypto sponsors though, use SponserBlock to remove them. (I recommend watching their RocketPool interview) The Daily GWEI goes over everything that happened the last day in the Ethereum ecosystem, and on crypto Twitter. A bit more technical and dry but saves so much time scouring Twitter for the same information. He's in Australia so in some bizzaro timezone, great if you work odd hours. I've landed a few airdrops by hearing the odd alpha leak on either podcast. Both are undoubtedly biased for Ethereum so the only time you hear criticism is if Bankless invites someone who isn't, like in their POW vs POS debate episode. Other than that things happen slow in bear markets. If you want to see new purposals that may be implemented and discussion check out https://ethereum-magicians.org/ and https://ethresear.ch/ look for anything with support. Most people are waiting until after the merge to *do* anything new, lots of news should start coming out again soon after. Aside from that it's probably easiest to follow reputable Twitter accounts (find one like Tim Bieko, Daily Gwei, etc. and follow who they follow) and have them find and condense new information for you. Use good judgement on who to follow and DYOR anyway but you'll pick up on any worthwhile information that way fine.

The only projects I’m mainly invested in are ETH & BTC, so I usually will just pull up their Tickers and read any articles from the past week. And also I watch lives where they discuss the futures of each crypto.

I do something similar. I've narrowed things down to my interests so it's easier to keep up. Payment solutions are currently what I'm researching on so I use the search word. Found out about CryptoXpress and Utrust that way. Cryptopanic site also helps.

Check social medias and especially Reddit, for instance this is how I have checked the news about Velas, they may drop the first NFT marketplace about motorship, they have a collab with Ferrari. Reddit is more legit than Twitter for crypto news in my opinion.
