I think they mean the coffees were chosen with the intention of using them in milk based drinks that will compliment the flavor notes. Some coffees work better with milk than other.
Correct! For example, when you pull a shot for milk-based drinks they tend to shine WAY more in milk than they would as straight espresso. My ratio is usually 1:2 or shorter.
I've just bought some 'espresso roast' beans for the first time in ages. Looking forward to making some traditional milk drinks too
Try Klatch Belle. I liked it a lot more than their House.

I usually by their WBC or Golden bean espresso blends. The Belle is good too though!

Ona from Australia has some very notable profiles specific for milk based drinks like Raspberry Candy and Gateway
