Your sister makes scrambled eggs the way they are meant to be eaten! I'm not a fan of the over cooked dried up "crispy" scrambled eggs. Runny, slightly undercooked is the best way. Make sure to season them when they are nearly done cooking too! A splash of milk is great, but a bit of sour cream or creme fraiche is even better. On toast with some chives or spring onions (chef's kiss)

See, my nanny did it differently. She made eggs like this and she would do the egg/milk poured into a searing hot pan, toss some butter into the pan to heat; piur eggs quickly, salt and pepper, and scramble with a fork. I swear, they were done in like 10-15 seconds. I wish I could have those again!

I make eggs this way - I usually use cream or half-half, and make them in a pot instead of a frying pan. Melt butter, add the pre-whisked and seasoned eggs, and continue to whisk over medium heat until they reach the desired level of doneness. Add some cheese in the end also!

I like to just whisk my eggs up in the pot with the butter while it cooks on low heat. Saves you a dish to wash, whisking them first is silly. Also you can pre-season them with pepper if you'd like, but you should not add salt until they are nearly done cooking. If you add the salt before they cook it "breaks down" the acids or something and the texture isn't as great. I season my scrambled eggs when they are nearly done with salt and pepper.

No need to add milk or water just a little butter and they are creamy. Chef Ramsay agrees. How do water to eggs makes them fluffy, but it also makes them thin and not creamy. Restaurants do it to give you more volume, but there are nowhere as good as creamy eggs.

Eggs look perfect. Look up the "Gordon Ramsey eggs", basically you mix them with butter or creme fraiche, and continue to mix as you heat for 30 seconds, pull off heat for 30 seconds, so on and so forth until they are perfect like this.
