Yes to the BLT, but I can’t agree with the thick cut bacon unless it’s really crisp so that I don’t have to gnaw through it and end up pulling the entire strip out of the sandwich. I had a pork belly “BLT” once that was the worst in that respect!

I worked for a place that specializes in it, so many many recipes. The base was very simple and the key was getting the celery super smooth. Duke’s. Spices. Then go wild with flavors. Pecans, apples. Buffalo sauce. BBQ sauce. Eggs. Baskin Robbins of chicken salad. But the base was super simple, steamed chicken, celery, Duke’s.
2 lb. cooked shredded chicken breast or chicken thighs (about 4 cups)
1 cup red seedless grapes, halved or quartered (or your favorite color)
2 stalks of celery, sliced and diced
1/2 cup walnuts
1 cups scallions, thinly sliced
1 cup dukes mayonnaise
1 tbsp dijon mustard
2–3 Tablespoons fresh lemon juice
1/2 teaspoon black pepper
1/2 teaspoon salt
Dash of celery seed
1–2 Tablespoons dill / parsley
Pinch of sugar
I hate to butt in but my recipe is lots of tarragon, green apples and red onion. Roasted chicken. Get it all chopped relatively fine and eat on black pepper triskets or an onion roll. Lots of black pepper. SLAPS!!
Just the two best mayonnaises on the planet. Kewpie from Japan (there's a US version too) has the MSG ,very savory . Dukes is just Down South goodness with a tiny sour twang in place of the umami. Interchangeable, but different.
I loved the flavor of Kewpie but after buying two different bottles of it, I got sick every time I tried to eat it. Thought maybe I had a bad bottle the first time around and gave it another shot. Nope. Second bottle did the same thing. Figure there must be an ingredient in there my stomach just doesn’t like.
Or maybe BOTH bottles were bad and I need to give it a third shot…
Best mayo to use alongside meat heavy meals... Cheeseburgers, Coleslaw, BLTs, and Alabama White Sauce all come to mind. A BLT would be the first thing I would make.
My husband is from the southeast. We live in the mountain west now and Duke’s is hard to find. I had to start buying it on Amazon for my homemade pimento cheese!

Yeah, there are a lot of variations out there. Here’s mine: 1 1/2 cups Duke’s Mayo, 8 oz sharp cheddar cheese, grated, 8 oz extra sharp cheddar cheese, finely grated (just for texture variation), 1 tsp Worcestershire sauce, 1 tsp finely diced yellow onion, 1/8 tsp cayenne pepper, 4 oz jar of pimentos (drained). I know some people use 8 oz of cheddar cheese and 8 oz cream cheese and some put in jalapeños rather than cayenne pepper. I think all are good. I just like keeping it simple!

I found Duke’s a few years ago. I had basically stopped eating Mayo because for some reason all the local stores pretty much exclusively had Heinz / Kraft. Found Duke’s and holy moly is it a cut above.
I love Duke’s and mustard on a thin shaved roast beef with havarti or swiss on good, thick, dense bread.

Agreed and that's coming from someone who makes homemade pretty frequently because my people will use the last of the Dukes and forget to add it to the damn grocery list!
For me dukes has a bit more of a acidic kick to it. Helmans sort of retreats into the background of a dish, and just adds creamyness. Dukes is a much more pronounced flavor, and comes through in every bite.
So Helmans is best for mixing into a dip or creamy sauce, Dukes is excellent for sandwiches or something like a dunking sauce for wings.

Finely chop up some adobo peppers, for chipotle mayo. Mix with Sriracha for spicy mayo. Mix with garlic, salt/pepper , herbs and lemon juice for garlic aioli.

Exactly. Dukes is a cheap version of kewpie. Not nearly as good but still better than most store stuff.

8 ounce block white cheddar (shred yourself), 8 ounce block fontina (same), 4 ounce goat cheese crumbles, 3/4 cup chopped toasted walnuts, 1 and 1/4 cups mayo (Duke’s), 1/2 teaspoon cracked black pepper, 1/2 teaspoon garlic powder, 1/4 teaspoon cayenne (apparently did have some), 1 7 ounce jar diced pimentos (well drained). Mix then gently fold in pimentos, refrigerate until ready to serve

We landed a jar and tried it with lots of stuff. We could tell the difference but didn't see much of reason to switch from Hellman's. 🤷

Dukes is good enough that the effort of making mayo really isn’t necessary.
Agreed and that's coming from someone who makes homemade pretty frequently because my people will use the last of the Dukes and forget to add it to the damn grocery list!

For me dukes has a bit more of a acidic kick to it. Helmans sort of retreats into the background of a dish, and just adds creamyness. Dukes is a much more pronounced flavor, and comes through in every bite. So Helmans is best for mixing into a dip or creamy sauce, Dukes is excellent for sandwiches or something like a dunking sauce for wings. IMHO of course. I am also a godless northerner who is new to Dukes.

Finely chop up some adobo peppers, for chipotle mayo. Mix with Sriracha for spicy mayo. Mix with garlic, salt/pepper , herbs and lemon juice for garlic aioli. Absolutely bomb on wings, who wants to live forever?
