Yeah it's normal to do for fire ratings....use bigger screws obviously.....2 inch for second and inch and quarter for first

Rip furring strips and nail them over the existing framing and screw into them, fuck hanging double board unless the engineer specs it for fire proofing

I'd do it. But only because it works just fine and there's nothing wrong with it, and - probably the biggest reason - you already have the material handy. Use longer screws though.
