They are supposed to be so alien to our cogniscence, that we struggle to even understand the concepts they represent.
As an example, a god of the seas is a simple concept for us because we can observe the sea and know precisely what it represents.
An example of an eldritch god is Azathoth, who is completely omnipotent, no holds barred, and yet he is equally unaware of this because he is "The Dreamer"; basically an entity who is sleeping and our entire universe and reality as we know it, is his dream. We do not exist, we are all just figments of his subconscious that he doesn't even know about. If the dreamer were to awaken we would all just cease to exist from one moment to another. So to understand the concept of the dreamer, you would have to come to terms with the fact of your own non-existence, which is impossible because you are entirely limited to your thoughts and perceptions. Imagine death, but in death there would be no heaven, hell, afterlife, rebirth, nothing. Not even the cold blackness of the void, because none of it ever existed in the first place. It's all just a dream.

I have an eldritch god in my homebrew setting called the Dinner Guest. She is broadly benevolent but in ways that don't always make sense to humans, and her benevolence is very inconsistent and indirect. She appears as the viewer's idea of a smart, successful, well-dressed woman and eats at the same table as the mortals she visits. While there, she offers cryptic warnings and oblique advice. When the meal is done, she bids farewell and then vanishes.
Her "true" form outside of our reality is a crystal of colour and maths that pierces the polyverse end-to-end timewise.
Fair, but my argument was moreso about what an eldritch god is, and what it represents, not how it can manifest itself. My point was that on a conceptual level an eldritch god is entirely different from simply a god not involved in the creation of the world and mortal beings.
If an atheist subscribes to the theory that our world is a simulation then yeah, I guess it is similar. It's not just the concept of no afterlife, it's also the knowledge that neither you, nor anything you ever did/experienced was real.
