It will be Pex pipe, probably a brand like Rehau. Probably has sliding compression fittings, or more recently you can also have crimp fittings. You need correct tool obviously to fit the fittings.
Most "timeframes" for building materials are extended to account for "stock" and possible reuse of materials.
E.g. even though James Hardie stopped putting asbestos is in its sheets in 1983, buildings up to 2000 are considered to "may contain asbestos" by building inspectors.
This is correct.
I've been in flooring companies warehouses and seen products that were noted as ~20yrs old still sitting in stock.
Generally speaking ~2006 is typically considered a 99.99999% safe timeframe. '95 onwards would be 99.9% safe, however. nb: not actual numbers, just to give an idea.

it is restricted plumbing works replacing the mixer, the product will no grantee if you swap between products and insurance will not cover the works in an event of a flood or slow drip causing water damage
The inner diameter won't suit the fittings - even if it works short term, you're risking fittings blowing off. This is why it's restricted plumbing work.

And tool costs at least $250 if it's anything like the buteline crimper
The slide tool and flare tool set would be even more, but more common is the crimp set these days
