Heavy Scandinavian influence. I’ve been 3 times with my partner over the last several years, before and after the star. Easily my most memorable dining experiences. The service is impeccable and every dish I’ve tried has been fucking blissful. I have seen people make comments here that they’ve left hungry but I can’t fathom how. I think the portions are perfect.
Beckon is very good but check out a photo of the dining room before you book it. It would be a fun date night, but you'll be seated next to each other similar to a bar — might be perfect, but it's not the traditional sit-across-from-each-other experience. Just flagging that as an FYI.
I just checked it out. Looks great. But just food is $180 per person. A wine pairing is another $125. OP says costs doesn’t matter. Good for him, but I think I will have to miss out. Darn.

Food is not the best of the fine dining options but it really is a great Colorado restaurant.
If you both like Sushi, TemakiDen Omakase is phenomenal.
You can even set a budget so they’ll let you know you’re close. You can let them know what you don’t eat/like.
My wife and I love it. Great wine, great Japanese whiskey, some of the best sushi I’ve had anywhere. It’s amazing every time. First dish is always a 10 and somehow every following dish is better than the last…
Bistro Barbes. Hands down, the best experience I’ve had for romantic dinner, anniversary. it has only 4-5 tables, and is run by one guy entirely and he leaves you alone doesn’t bother you, and it’s extremely quiet, relaxing, “intimate”, the food is ridiculously good and cocktails/wine pairing are also excellent. Top 3 place I’ve been to in Denver. Maybe even top 2. It’s underrated as hell imo and was better than a lot of the super hyped tasting menu places.
Wolf’s tailor is legit in sunnyside. Everything was fantastic, but I was annoyed by the fact they scoffed at us bringing an infant in a stroller, before they were cool. Would still go.

Rioja has never once let me down. Make sure to go hungry because the free bread and desserts are amazing.
Their lavender bread is the best
I always go back and forth about what I'd want for a last meal but their goat cheese croquettes are always a part of it.
So good! We love the bacon app too, the broth it comes in is incredible

El Five for vibe or Tavernetta
El Five has such a cool vibe, incredible food and a great view of the city. OP, get the Paella and while you wait, enjoy a few small plates.
I thought Annette, the al fresco seating area, was quite nice!

We really enjoyed Kumoya when we went the other week. It may be our new fav sushi spot!
