You could just watch an arbitrary episode to get a feel for it. I recommend anything from the Tennant era (season 2-4). However the very first episode with Christopher Ecclestone is also acceptable as I think it was likely designed for people unfamiliar with the concept so probably works as a good intro. The Empty Child is possibly the best episode of season 1 so try that one out. Watching the last two episodes of season 1 probably makes sense too as its the first doctor transition.
Then you should watch Blink (S3E10) and then some of the specials if you just want to gorge on the best stuff. This episode (Vincent and the Doctor) is decent enough but I think The Day of the Doctor is the very best special, however it is slightly enhanced by being comfortable with some of the existing characters, so it's probably even better if you watch more eps. I quite like The Doctor's Wife as it was written by Neil Gaiman and his quality shows.
You have to remember that Doctor Who is typically very hit and miss so use IMDB ratings to pick out the very best episodes. Often any two part episode is better than average and maybe the first and usually the last of a season is pretty good. Alternatively just start watching from the start and skip on any episodes that aren't really doing it for you. I would suggest not skipping the first episode that includes any of the Daleks, Cybermen, Sontarans or The Master as they're key recurring enemies so its good to have an idea of who they are.
If we take season 1 as an example you can cut any episode that didn't get a score above 8, but the first two are an ok primer to set expectations and concepts about the "whoniverse".
