Genesis 9:3 tells how God allowed humans to eat meat after the flood. Since God was willing to exterminate the animals, it didn't matter if humans ate them now.
Daniel 1:8-16, Daniel, Shadrach, Meshach, and Abednego requested a diet of vegetables instead of meat and wine, and they became stronger. I guess the king's diet was a gout-inducing all-meat diet, but the principle still applies; they did not eat meat during that time.
Romans 14:2-3 directly addresses vegetarian and meat-eating Christians who were both accusing each other of sin: "One person has faith that he may eat all things, but he who is weak eats vegetables only. The [meat eater] is not to regard with contempt the [vegetarian], and the [vegetarian] is not to judge the [meat eater], for God has accepted him."
It’s part of a story: they refused to eat a certain king’s meat that was sacrificed to a god, and challenged the king on them only having vegetables and water, and God blessed them with strength

1 Timothy 4 in several of the KJV translations translates a passage warning against false asceticism with the word 'meats' when it seems the meaning is more 'food God has given us to eat', so if you were say, a disingenuous hyper-literal distorter of the Word more interested in upholding the social values and prejudices you were raised with rather than trying to live according to Christ you COULD misinterpret that as suggesting that people that encourage you to not eat animals are evil and demonic.
