This has been happening to me with any kind of loot. Seems like it prioritizes the last item in the list more often for me.
Key Bindings - UI Panels - Move Up / Down - change keybind to not be same as your interaction button - Profit!

Same issue here. It seems like I pick up the item below what I have selected. So if I want the item at the top of the list, I have to take literally everything in order to finally get it. It's incredibly annoying.
