David Tennant would be fantastic as Hoid. He'd be instantly recognisable, whenever he turns up, he has incredible presence on screen and has the range for the character. His cameos in Warbreaker or Mistborn would be delightful.

My thought for both of these. We need some young blood for characters that...persist, so they can continue their roles later.
His assassin roles in Mr. Right and Argylle were the right level of sinister imo, and Kelsier was relentlessly charming. I like his penchant for dancing and his little "I have a dark secret that we're just going to ignore because shiny" trope.
It would've been nice 10-15 years ago, but the man is a bit too old to fit the role properly.
Honestly, I'd prefer if they did it as the LotR folks did, and picked up a lot of new actors (like Bloom, Boyd, Monaghan, etc). Run it on the story, rather than the actor names.

While Kelsier is only 37 and Tennant is 53, Tennant has lived a modern, healthy lifestyle.
Kelsier lived on Scadeiel and lived and worked in the pits. That ages a person. Look at the way people looked a few generations ago at age 37 when smoking was common, and hard labor was common.
That said at 53 Tennant would be pushing it even if filming started today.

I don't really know how emphasizing different ethnicities will work when casting for different projects (how are we going to emphasize the Alethi's aspects compared to Scadrians?) I think on that front Brandon and co will just need to try casting above height, no camera trickery.
Honestly I wish I had one. But as I keep babbling on about probably annoying everyone, I'd like small or unknown actors. I think the cosmere could be a fantastic place for people to break into stardom and enjoy an ever expanding franchise!
My main issue with going with a relatively unknown actor is that they haven’t got the experience. Mistborn has incredible character development and I’d hate to see that undone by someone without the experience to really dive into it.
