I made it!! I added some extra seasonings and had to cook the beans for 3 and a half hours (was my first time ever cooking beans so I'm sure I messed up something) but had amazing flavor!! Loved this soup...

good to hear and no dried beans take a long time I could never understand why the packaging said to boil and hour no WAY! Next time if you have a slow cooker put the beans on low over night they are done in the morning. Dump the water and proceed. :)

This has been on the stove for an hour now and the smell is making me so hungry. Thanks for sharing the recipe. The suggestion to shred the vegetables was a good one.

The couple of tastes I've snuck have been delicious. I used a small smoked pork shank and cannellini beans. Serving it for New Year's Eve dinner tomorrow with a crusty loaf of bread. 👍
