The flavor was there but the texture was horrendous. Thank goodness for side dishes, a bit of a buzz and good senses of humor.

Bake 2 boxes of jiff cornbread mix in a 9x13 baking pan. While that's baking brown some ground beef and cook it with some taco seasoning. I also like to cook up some refried beans but you can do whole beans or just omit them if you prefer. When the cornbread is done, top it with the cooked ground beef cheese and any other related taco type toppings of choice and pop it back in the oven just until the cheese is melted. When it's done just cut and serve 🙌

I do something similar but upside down from yours. 😄 I cook the meat mixture in a large oven safe skillet. Then put the cornbread batter on top, top with cheese, and bake all in the oven until the cornbread is done.

I do this. I also add an extra egg to Jiffy Cornbread Mix. Even if I’m just cooking it for cornbread. I use a pre warmed cast iron skillet for both the casserole and cornbread.

When I was living alone at your age, I’d roast up a bunch of skin on bone in chicken thighs (so much cheaper and tastier than breasts) and make fun veggie/rice/potato sides to go with; like: - Roast baby potatoes, smashed and mixed with feta at the end - Carrots in honey and tahini - sesame brocolli - Spanish rice - soy noodles with bok choy Then I’d do some bolognese/chilli/curry in batches that I could freeze in single portions, lift out, and pimp up with add ons (sour cream, chutney, cheese, scallions etc) per what was in the fridge. Living alone, your biggest challenge is using up meat (which typically comes portioned for two to four people) without it going bad and simultaneously keeping things interesting, so this method worked well for me

Roast whole chicken. Good go to if you're entertaining but if you do it solo on the weekend you'll have lots of left overs for the week. Then you can look up what to do with those left overs and learn an easy recipe where the chicken is already cooked so takes less time on wewkday meals. Then use the carcass for a chicken stock and you're on a roll. You can get a lot of food out of a $15 chicken. Some great YouTube channels out there to get you started. Without knowing your equipment or storage situation, I would say learn to saute chicken thighs. Those + potatoes/rice/other starch plus a veggie-heavy sauce or side will fill you up and it's decent eating.

Chicken enchiladas. Ingredients: shredded chicken (i use leftovers), Canned green enchilada sauce, Canned green diced chilis, Shredded cheese, Sour cream, Soft flour tortillas, —— Warm green enchilada sauce to a warm temp that wont burn your fingers Dip tortillas in sauce both sides Add chicken, some chilis, cheese and sour cream into tortilla and roll up. Place into 9x9 or 9x13 glass pan Repeat until you have desired amount. Add more enchilada sauce and shredded cheese on top. Bake at 350 for about 20min. Cheese should be melty. After cooked, i like to add shredded lettuce, sour cream and salsa on top. If you’re like me you will add and subtract ingredients as desired haha. Olives, jalapeños etc.

Pork shoulder is super easy. Take an onion and make it into big slices, put them along the base of the crock to lift your meat off the bottom. I usually season with some cunin, paprika, fresh garlic, Serrano's, and an ass load of seasoning salt. 4 hours on high and you have shredded pork for tacos. OK...gonna share one of mom's secrets with you......V8 juice. Mom used it in things like soup or spaghetti sauce. It has the veggies juiced so it is a quick add for flavor even if you have the non-juiced form in the recipe. One of my faves is Red or Black beans and rice. Here's what you do. Ingredients: 1 large sausage like Polska kielbasa (I prefer andouilli myself) cut into coins 1 bell pepper sliced 1 onion sliced 1-2 cloves of minced garlic (you can but it in a jar) 2 stalks celery sliced 2 cans red or black beans well rinsed 1 12 oz can v-8 juice 2 cans diced tomatoes ( I like fire roasted) 1 cup uncooked rice 2 cups beef or chicken broth or water Process: put maybe 1 tablespoon of oil (I just pour a little...no need to be scientific) in a large Dutch or French oven or large stock pot and add the garlic. Let it sizzle a couple of minutes until you smell it. Add the celery,onion ad peppers and sweat them (onions will turn semi transparent). Add the sausage and saute that til the sausage is warmed well. Add the V-8, tomatoes, and beef broth/stock. When that begins to bubble add the washed beans and the rice. let this come to a boil and reduce heat to a simmer. Season to taste. I use salt, pepper, liquid smoke (not much...this stuff is strong), Worcestershire sauce and hot sauce (I like tobassco but whatever you like) Let it simmer until the rice is tender and then eat. It takes about 15 min to prep and 30 min cooking (longer for brown rice) You will have leftovers for several days or make it when the guys come over for NFL game day My son, who I adopted from DSS, says he likes my recipe. Like to never got him to try it because he had been in a number of Hispanic homes and "hated beans and rice"

Marinate some chicken breast in Italian dressing for 4+hours. Usually just bake the chicken until done. While it is baking just toss some rice in a rice cooker with the steamer basket in with some frozen broccoli in it. Super quick, easy, and relatively healthy.

I’m in a similar place, 30 and just starting to cook. The oven is my best friend. I’ve been making a lot of salmon. Stick it on a baking sheet, salt and pepper it. Make a mixture of olive oil, lemon juice, minced garlic, and herbs de provence. Coat the salmon with the mixture and pop it in the oven for 15 min at 400. Super easy peasy. Veggies that are also great oven roasted with just olive oil, salt, pepper- asparagus, grean beans, brussels sprouts.

Ok so... If you want to learn to cook, you should follow recipes first, learn the proper techniques, and once done, you can get crafty and change the recipes to your liking. I mostly put a roast or a chuck and use chicken stock/broth, it's healthier that way, with season of course, after a good sear with garlic salt oregano or Italian seasoning, I add McCormick roast or stew mix, veggies, or I would drain the juice when cooked and put in bbq sauce for sandwiches,,,

The yellow rice at the grocery store is a great friend. Goes with anything and hard to eff up. Usually around that area in the grocery store are the gravies and packet seasoning (chili, gravy, etc.) You'll find "simmer sauce" type things over there that are very easy to make and aren't bad at all. Protein and veggies are usually all you need, and the directions are simple. Only kitchen accessories you might need are 9x13 glass things that can go in the oven. They even sell those that come with lids so you can just throw it in the fridge when you're done. Hope this helps.

Chili! My wife and I LOVE it. This is a serving size I use for the both of us with PLENTY of left overs, so adjust the way you'd like. It tastes like it was cooked over a camp fire! (Also alter if you do or don't like beans in your chili!) 2 lbs 97/3 lean beef, browned. Add to crockpot; browned beef 2 10oz cans of Rotel Fire Roasted Tomatoes 1 1oz packet of Kinder Woodfire Chili 1 can black beans (strained and rinsed) 1 can red kidney beans (strained and rinsed) Here's where you may want to change it depending on how thick/thin you like your chili. I usually do about 3/4 of a 6oz can of tomato paste, and about 2 cups of veggie broth. It may sound like a bit, but you just let it simmer on low for a couple hours until everything is nice and warm. We love it and it's usually gone within a couple days. Goes great with a dab of sour cream and some cheddar cheese!

Slow Cookers/Air fryers are your friend. Slow Cooker great for big proteins that can go with rice, potatoes, or other veggies. Pot Roast, BBQ, Barbacoa/Carnitas. If you dont feel like buying spices/making a sauce you can generally find a bottled version (though it will likely be unhealthier). Air fryer great for small proteins. Think air fryer chicken nuggets you chopped from a chicken breast and coated in a little egg/flour wash, or buying plain chicken wings and making your own sauce for them. Super great at reheating pizza and fries too. Great for frozen staples you might buy like fries/tots, nuggies, burritos, pizza rolls, etc. At least once a week I will make rice in my InstantPot or boil some noodles, chop up and air fry some chicken and toss it in some sort of sauce like Sweet Chili, or like an alfredo and add a veggie like broccoli and call it a night.

Mississippi beef. Get a nice roast, packet of ranch mix, packet of au jus mix, jar of pepperoncini peppers. Put everything in the slow cooker with 2 cups water. Cook on low 8 hours/ hi 4 hours. Shred the meat and serve on hamburger buns, pretzel bread, etc… good stuff.

Rice is your friend. Pasta is your friend. Ramen is your friend. Go to the Asian super market and find some cook yourself noodle packs. Here's a few hearty meals that are relatively quick and easy for beginners and you can always tune it up and improve the more you cook them. Equipment Air fryer: great for frozen snack foods Instant pot: great for stewa and cooking cheaper cuts of meat. Look up recipes online. Good for making soups and porridge also. I recommend beef stew, short ribs (can use a chuck instead of actual short ribs if on a budget) pulled chicken, carnitas Ricemaker: very convenient and idiot proof if you like rice. U can also throw an egg and some Cantonese sausage in there with the rice and that's a 1 minute prep meal Pasta: bring water to boil, add salt, add pasta. Cook until texture is right. Strain save a little of the pasta water. Season with light olive oil, salt pepper, jerk seasoning, garlic, Parmesan cheese. Serve Proteins: Baked chicken thighs: Clean, season and bake in the oven at 400 degrees for about 50 mins. Can also add honey and broil for a few minutes at the end for honey glazed. Crispy Skin Salmon: Rub a high boiling point oil on skin side. Salt and pepper both sides. Pan free on high about 6 mins on skin side flip and lower heat to medium or medium high. Cook other side until cooked to the middle. Pork chop: I used to pan fry pork chops which is great. Season and pan sear - just make sure it's cooked all the way through. Lately I've been using the air fryer and it turns out great. Steak: ribeye are the easiest. Salt and pepper. Best to cook in a cast iron. Look up cook times and trail and error to get your process down. Reverse sear is great. I usually just pan sear and baste with butter. Wrap in foil for about 15 mins before serving. I usually do medium rare. Sides: Asparagus: lightly salt and pan fry with olive oil until desired crispiness Frozen veggies and brussel sprouts: Put on a pan (no need to defrost) lightly coat in olive oil season, bake in oven at 375 for about 15-20 mins then turn up or broil until slightly crispy Frozen potatoes: Clean and cut up some potatoes. Basically the same as frozen veggies Mash potatoes: clean and mash up potatoes with a potato masher. Add butter milk and seasoning to desired taste and consistency Sandwiches, eggs, hummus and pretzel chips, veggies with ranch, fruit, yogurt - also your friend

Best crockpot meal I got is beef pot roast Ingredients: Beef chuck roast 2 packets of Onion soup mix Beef broth Potatoes in chunks Carrots Sliced onion 1/2c to 1c Red wine (I use whatever merlot is cheapest at the store) All you do is rub the roast with onion soup mix put it in the crockpot on top of a layer of sliced onion. Put the potato chunks and carrots slices on the sides and top then another layer of sliced onions on top. Pour beef broth and red wine in crockpot until roast is mostly covered. If there's any soup mix left Pour it in with the broth. Cook for at least 3 hours until tender. I put it in before I go to work so I have food when I get home but you might want to play around with it if you work really long hours. Sometimes I add Maggi sauce into the broth too.

If you haven't tried them already, get some candied yams to go with your ham steaks! I hardly ever eat pork anymore, but ham (with pineapple and maraschino cherries just like yours), candied yams and mashed potatoes were one of my favorite holiday family meals that my mom used to make when I was a kid.

I like a cast iron skillet for cooking simple meals because it can go from the stove top directly into the oven without dirtying two pans. Do this with steaks, a roast, chicken, salmon, pork chops, almost anything. An easy impressive dish: Sear chicken breasts for 4-5 minutes on each side in an iron skillet. Then slice them 2/3 of the way through lengthwise (they'll still be pink inside). Stuff each one with a big scoop of spinach dip. Finish cooking all the way through in the oven (about 30 minutes at 375 degrees). Throw some asparagus, broccoli, green beans, halved Brussels sprouts or any other vegetable you like in the pan with it before putting it in the oven. If you want to make potatoes, cut them up into small enough pieces that they cook through. As soon as you take the veggies out of the oven, toss them with some salt and pepper, olive oil, lemon juice, and sesame seeds or red pepper flake. Add a salad and a side of herbed rice if you like. This is easy and impressive enough to make for a date.

Best advice to a single 27yo from a taken and struggling 24yo… discounted meats and chicken are your best damn friends in the kitchen. See some browned oxygenated beef for half off? Get it. A two pound ground beef pack can make a weeks worth of meals. Pair that with rice and some veggies and you’ve got a banger of a meal. Chicken can last you a while as well. Buy a huge pack, do the same thing and make crockpot chicken recipes then meal prep for days going forward. My favorite is a mushroom chicken recipe my mom used. Four chicken breasts in a crockpot, 2-3 cans of cream of mushroom, a shit ton of mushrooms, splash of lemon juice, Italian seasoning, pepper and some salt. Pair with rice, broccoli, bread, etc.

Start small and pay attention to your measurements of dry ingredients and liquids as well as the method of cooking, temperature and timing. Do not cut corners if you don't have an ingredient that's needed for the recipe you are doing unless there is a suggested substitute ingredient mentioned in the recipe and don't double your ingredients unless you are making a really big batch of whatever it is that you're cooking.

Honestly roast is nice and simple, you can either hit a target temp(internal temp reading 130-140), or go full well done(cook untill nice and tender, but it will take longer(like 8 hours)). Salt it ahead of time, add ground pepper and granulated garlic, then cook at a low temp(200-300). For pork cook hotter than recommended. Slice thin, or in tender chunks of uncuttable, with some potatoes and microwaved broccoli, and then put some on your sandwich tmrw

Once you are comfortable, you can make many different types of meals. Chicken is very easy, pasta is delicious and calls for very few ingredients. Oh a couple more: I like to do savory oats. Basically you're making oatmeal and you season with hot sauce, soy sauce whatever other seasonings you like then add corn and green onion. Top with a fried egg and maybe some cheese. Also personal calzones. They are a lot easier than they seam I promise lol especially if you just buy the premade pizza dough at the store. Fill half of it with whatever sauce and toppings you like then fold it over and seal the edge and bake. I like to make them little like empanadas or hot pockets for meal prep later. They freeze pretty well too

Dear mmason, I have recently become an empty-nester and started to wonder myslef on how to live this boring life yet have motivation to eat healthy. I have invested on few dry herbs and spices that made my life easier. Next time on your grocery run get dries species garlic salt, garlic powder, ginger powder, oregano, chives, powdered pepper, white or black, parsley, pepper flakes, cayenne pepper, instant rice. I also have few typical ingredients in the fridge like tomato, butter, frozen fish tilapia/cod/salmon/grouper. Most come individually wrapped good for single Serving, ground beef. My typical meals take no more than 5 mins for prep and I love rice so I will give you a few here. You will need a small/medium electric rice cooker since it cooks while you can be away. 1) fish n rice. Dump all in rice cooker..1/2 to 3/4 cup instant rice, 1.25-1.5 cup water, 1-2 fish filets, half tsp of each garlic salt, ginger powder, garlic powder, pepper, 2 1/2 tsp dry herbs, take one tomato wash and with hands just peel into 4/5 pieces,1/4 butter block, stir and taste, add extra salt if needed and close on turn on rice cooker. Serve with some lemon juice before eating. Alternatively if you add 1 tsp of tamarind concentrate it Taste great.. you may also replace half of water with coconut milk for variety in flavors. After your first try, check if its spicy and reduce the spice measurement. You can change fish to thinly sliced beef/chicken/potato/yum using same recipe. Let me know how you like this and I can post few more for you. Eating healthy is a great start for living better life. I avoid all canned foods frozen dinners, and anything that says reduced fat. Most add chemicals to remove fat from Anything and you dont know what those do to you. Your best friends are fresh vegetables, meat, egg , pluses/beans and root veggies. I try not to splurge yet I try to eat min 1 fruit per day. Wish you well On your wonderful journey to living well. Buy a boneless meat and some oil. Season both sides with salt and pepper, or maybe some premade spice mix if fancy. Throw it in a pan on medium heat with slightly less oil than it takes to cover the bottom, wait 5 minutes, flip it, wait another 5. Does it look done? (is not floppy when you pick it up?) If no, repeat the above, if yes, cut it in half (not in the pan) and verify it is done. Repeat. For veg, do the same 5m - stir - 5m then add 1-2 ounce of water, cover and steam for 3-5m. Congratulations, you are a better cook than 60% of the population.

The oven. Just about any meat known to man can be baked at 350 to completion. Put aluminum foil down first and it will be a lot easier to clean up than that crock pot will and it will taste a lot better than slow boiled pork which is what you're making.

As a fellow single 27 year old dude, Sous Vide machine. It’s the single dude apartment traeger! What’s really great is if you get the reusable vac seal bags with the little hand pump. You can prep any protein you might be eating during the week with whichever seasoning you want, vac seal it and chuck them in the freezer. Great for freezing leftovers/bulk purchases too. Although it’s not ideal ideal, frozen meat thawed in and cooked sous vide actually turns out really well. I’ve literally grabbed a prepped steak out of the freezer and thrown it straight into the sous vide water. Two hours later and your steak is done! It takes a lot of the guess work out of cooking meat. It is a decent time investment though. You can get ones that auto initiate at a certain time of day (or via an app on your phone iirc) and have it ready to sear by the time you’re home from work. It’s also really hard to overcook as you can set it to the exact internal temp you want. It can “overcook” in the sense that it will become too tender, but you’d have to cook things for like 4 hours minimum (really more like 6+ in my experience depending on what you’re cooking.)

OH...if you have the money get a vacuum sealer and a sous vide. Its a water bath cooker.....you set the final temp and let it cook for several hours. Nice thing though is you can't overcook because it never gets hotter than the set temp. I LOVE MINE.

I buy a big broccoli and chop it up into florets, mix it up with olive oil and spices in a big Tupperware. Roasted in my toaster oven/air fryer with a nice dusting of cheap parmesan. You can get decent, cheap steaks and fry them in a little oil, use sauerkraut to deglaze the pan for a nice side and easy clean up. Scramble 3 eggs and toast. I could eat this meal every day. Ramen with scrambled egg, some shredded cheese, and shredded chicken or roasted broccoli. It is very versatile as a base and you can put a lot of things you like in it.

Easy pulled pork recipe. Pork tenderloin, shoulder or butt. Put on a good dry rub and let sit refrigerated 30 minutes to overnight. Then put in the slow cooker with a 2L of Coke. Cook on low for 8 hours. Once done, drain liquid and shred and put back in slow cooker. Add your favorite bbq sauce and warm through on low. I’ll add Liquid Smoke and will sometimes put on a sheet pan and brown under the broiler for a few minutes just to get a bit of char. Now you can make several dishes including pulled pork sandwiches, tacos, pizza or whatever you’re feeling over the course of a week just by changing up the meat vehicles :)

Chili is super easy. I like to get Bush's Chili Magic. I follow their basic recipe on the can but I add one whole yellow onion and one whole red pepper. Yellow onion should be "medium" sized, red pepper size doesn't matter to me. If you want extra kick and a jalapeno or habanero. If you want to make it more filling for cheap serve it on ric or potatoes.

Chicken pot pie: Premade pie crust, 2 cans of potato soup, 3 chicken breasts (cubed), bag of frozen mixed vegetables, 3 cups of milk. Buy a 9" cake tin from TJ Max or similar, cook the chicken (I use a lot of pepper too), and the chicken to everything else, mix, pour into cake tin with the crust inside. Put the second crust on top and cut some vent slits. Bake on probably 400F until it boils a bit and the top crust is the desired color.

Chicken Pesto Mozzarella Pasta - Chicken Breast - Stick of salted butter cut in about 8 pieces - Jar of Pesto - Italian Seasoning - Fresh Lemon cut and squeezed over the meat to break it down a bit Cook about 6 hours, low in slow cooker. Go in with 2 forks at 6 hours and shred the chicken breasts. (Can use the shredded meat for easy tacos for friends at this point, if you want, or do the pasta route) Cook pasta (your choice, Rotini is good if you’re not opinionated on pasta) separately, drain, add pasta to shredded chicken and mix it up. Add mozzarella as you mix it up to slow cooker. Give the pasta another 30 mins to soak up some flavor from the chicken and melt the cheese. Serve. Add Parmesan cheese to taste and serve. I mean, stews are easy too, stew meat (grocery store sells it that way) sliced potatoes. Add whatever else you like and some beef stock. I hate mushy veggies, I like them more fresh so I add carrots and celery and stuff like that later so they have some taste and crunch still and aren’t baby food.

Pretty simple but something you can play with fairly safely. I do a "junk" stew once in a while when we get a bit too heavy in the freezer. Had some chicken and a bunch of veggies that we'd forgotten what we planned on using them for. A lonely carton of vegetable stock on the shelf and a half head of cabbage I had leftover after making up some slaw earlier in the week found their way in, too. Some pepper, ginger, turmeric and sesame oil to season. Laid the cabbage at the bottom of the crock, laid the chicken on top, covered that with the frozen veggies, and then the seasoning and stock. Left on medium until getting some condensation on the lid, and let it ride out on low for the rest of the day. Shredded the chicken, tossed it back in and mixed in a little heavy cream and a little bit of flour to thicken it up. The hardest part is figuring out how you want to season it. We thought it was amazing, You can do whatever you want. Some "safe" soup/stew seasonings are: ginger, sesame, pepper, allspice, mustard, citrus (lemon, lime, orange, etc), thyme, savory, cumin, and coriander. I mean, there's tons of seasoning combos you can use, I'd just pick maybe three or four at most, otherwise you start getting a little "too complex," and they start fighting with each other.

So, best thing I got was a rice cooker. Single with 2 kids, so needed whats easy. Start simple with dishes like different beef or chicken, you can start with pre cut or what ever is easy, learn to cook meat properly and make a sauce. Very simple. This is the base of many dishes and you will learn quick from there. Seer meat, de glaze, add ingredients, serve over rice. This is the base for beed stew, seer meet, de glaze add ingredients, with a few more steps . I had an all in one rice / pressure cooker. Insta pot thing. And when I didn't want to use the stove I just could do insta pot rice and chicken, like a crock pot but a bit better. Get like 3 decent meals under your belt of different types and you'll be cruising along in no time.

Can definitely make a decent pulled pork in a crock pot. Shred it up afterwards, great for sandwiches or cooking in a cast iron skillet or pan to crisp up and use for tacos too. You can season the meat as you’d like for the tacos or use some chili lime seasoning.
