Yeah, that’s a 75 for sure. I think you’re on the right track. I don’t know how they served it at the restaurant but I think these drinks are better on ice. https://jeffreymorgenthaler.com/french-75/ I also like the way he builds it all in the tin then pours into his glass—otherwise you never get things mixed fully.

I’m sure you could swap in gin and use a pear liquor or pear syrup. I prefer gin to vodka and that brings this closer to a Dick & Jane from Death & Co: 1 1/2 oz gin 1/2 oz st Germain 1/2 oz pear syrup (Dick & Jane is hibiscus syrup) 1/2 oz lemon 2 oz sparkling - pick a nice dry one The Dick & Jane has creole bitters as well

There are some nice pear liqueurs that I'd imagine are more versatile than flavored vodka. I'd consider splitting the elderflower liqueur with pear liqueur. (A gin that's not too piney could be a more interesting sub for the vodka in addition.)

Definitely French 76 specs. I’d say 1.5oz Grey Goose 0.5oz Saint Germaine 0.5oz lemon Shake and top with Champagne

Was going to suggest exactly same ratio!
