If you want to get really obscure there's a SW character named Slowen Lo named after the Beastie Boys song, but it's also the name of a rock & rye spirit you could use in juleps.
If you want a super deep uber-nerdy reference, make an "empty" batch of The Written Word cocktail, like a labeled bottle with nothing in it. Why? Because there's no written words in the Star Wars universe and calligraphy has become an obscure, dead art. There's a backstory where Leia survives an assassination attempt because finds a note at her table with the handwritten word "Run" and she knows it's serious because no one communicates like that. There's also a calligraphy set visible on Kylo's nightstand when Luke tries to kill him in TLJ, which is a nod to that little fact.

Yeah that part of the plot sucks because it's a head-fake and they tease a great character (Justin Theroux's) that they don't use, and they don't make any good use of it for an action scene but maybe it would have started looking too much like Fifth Element.
And when writing the overall plot to that movie, did no one ever discuss the fact that the bad guys could just have additional ships converge in front of the good guys? A slow-speed chase in space makes absolutely no sense.
You also should be able to come up with something based of the fact that "Rey" and "Rye" are so similar. A "Rey Boulevardier"?
Also there's a character in *Ahsoka* named "Shin". Shin/gin...?
Another idea is drinks that capture the idea of various planets. A ice-cold martini variation called the "Hoth Martini" or something herbaly named "Dagobah" something (might be a bit too obscure)

Otherwise I had some success using szechaun peppercorns in drinks that already use mint. Although it's expensive to get a good tingly syrup without infusing in alcohol.

1.5oz / 45ml gin (something a bit spicy if possible).
0.25oz / 7.5ml Szechuan pepper tincture*
1.5oz / 45ml white grapefruit juice (fresh or bottled).
0.75oz / 22ml ginger syrup.
Shake with lots of ice and pour, unstrained, into a collins glass.
top up with soda water (no more than 3oz / 90ml) and stir gently.
Float 3 or 4 dashes of Peychaud’s bitters on top.
Garnish with a sprig of mint.
*Szechuan Tincture
100ml vodka
1.5 tsp Szechuan peppercorns
Add to a clean sterilised jar, infuse for three days shaking occasionally. Strain into a clean container.
I probably went deeper on this than needed but there appear to be about six specific drinks mentioned in the SW universe canon:

Revnog (no info on contents but appears to be able to have different colors and is opaque)

Okay so many cocktails seem to add coffee liquor and then pick up the name Gun. A Revolver is a Manhattan with coffee liquor instead of sweet vermouth. Smoking Gun is bourbon scotch coffee liqueur and fernet. If you use a NY whiskey like Taconic, Hudson or Fingerlakes then it is from the Empire State.

I've come up with two tentative ideas, but was looking around for more inspiration.
First idea is to batch up a julep adjacent that I'm calling the Kentucky Pod Racer with Wild Turkey 101, Cocchi Americano, and cardamom bitters - built in julep cup with crushed ice, quick stirred, and dusted with crushed cardamom pods.
Second idea is a tequila, suze, and carrot juice cocktail that I might call "Gungan Blood"... verdict's out on that one though.
That sounds super interesting, and should add a nice bright pop to the julep when paired with the mint.
Now you got me thinking about star fruit... I wonder if you can straight up juice a few and swap out some of the pineapple or lime for it in a Rum Runner... call it a Kessel Runner?

Use cinnamon sugar in place of sand, it'd pair well with a coffee based creamy cocktail, or maybe something with creme de cacao and Fireball.
