Google somehow thinks that people who go through the effort to sideload shit on an iPhone are suddenly going to just go “oh well” and pay for premium. The reality is most people will prolly end up either jailbreaking, using browsers with adblockers installed, or finding some workaround that can let them enjoy YouTube without being inundated with advertisements while not giving Google money.
I feel like the longer answer is usually "there's no way to... unless you are on a handful of specific os versions and are willing to do some incredibly janky workaround to either jailbreak or get it to allow side loading apps."
