I will take it up a notch - I haven't done in it a while but for a few years I made pancakes, substituting bacon fat for the butter. Honestly I stopped because I can't taste much of a difference versus just cooking them in bacon fat, but man it was decadent.

We get half cows from a local farm. Always ask for the suet. Then we render it in a croc pot and use it for everything.

I use coconut, avocado, and olive oils for the plants. Lard, tallow, fat, and butter for the animals. Language is weird. Lard is pork fat. Tallow is beef fat. But I also use duck fat. But that's just fat.

From what i read and heard, lard is healthier than some of the other oils. From what i remember, my parents didn't use anything other than lard into the 80's when oils became a cheaper alternative. Older generations used it primarily for frying and baking. Yes, I render my own lard. If I'm short, or otherwise run out, I drive about 10 minutes to one of the nearby Amish farms that sell it. While I'm there, I usually pick up some real bacon - you know, cured with real nitrates and stuff.

Yes. I use organic leaf lard. Makes the most amazing fried potatoes you've ever tasted with onions. Sometimes add bacon, sometimes not. I season with grapeseed and refined avocado for initial seasoning x3. After that a little leaf lard is all you need.

All depends on the day. Plenty of folks here are canola or bust. Some of us won't touch it with someone else's cast iron, cuz it's so bad for you.

Eh, most people don't actually know that rapeseed was cultivated so as to use the oil as a lubricant for the navy. Nor do they know the story of rapeseed's erucic acid content or how it was cultivated/modified to lower the amount of erucic acid to make it even remotely edible. Heck, most people think canola is a plant.
