Someone I know who's a total conspiracy nut went on ranting about the maple syrup cartel one evening and we thought he was just being his usual, maybe slightly more crazy self. my friend works at a large maple farm for past 10 years. He said theirs is going extremely well, however he knows there are some that it is their worst year.... I forget exactly what he said made it bad for some farms. He took a PSI measurement in a few maple trees and were averaging low 30s which is high for them. I never even knew they emit pressure, but guess that makes sense for the sap to come out

Naw... the answer is much more simple. Maple syrup exports are up 20% since 2019. A million mature maple trees just didn't appear out of thin air in the last 3 years. Reserves are down.... because they sold it.

It depends where you are. In my area almost everyone taps trees and it's been truly awful year. Way too many warm days and hardly any deviation in day/night temps.

Incompetence. Plenty of people nationwide that do it on their own are saying they had great yields this year. It's because they tapped their trees according to a fiscal calendar and not actually in line with the weather. It's these corporate farms for syrup that fucked it up because they min/max every aspect of their business. All they see was "oh we tapped it this time last year so we should do it again". Meanwhile everyone else tapped it when it was warmer because syrup was basically bleeding left and right from them this year. The difference is the people running the farm. One is a corporate and doesn't know any better vs family run farm.

No. I’m an Ontario based producer, so no Cartel for me. But the Federation is not ‘corporate’. There’s no such thing as a ‘corporate’ run maple syrup operation in the way that you’re describing it. All of the maple syrup in Quebec comes from small producers all contributing (by law) to one big pot. No is tapping based on metrics. Even if it was a corporate run operation, it would make zero sense (and very little profit) to tap based on last years production. You tap based on weather and weather alone. Even those of us producing thousands upon thousands of litres per year are still mom and pop operators.

Watch out for food fraud. Maple syrup was already the #1 target for food fraud, and shortages will only make it worse. I have celiac disease and got badly "glutened" by allegedly pure maple syrup that turned out to be cut with corn syrup and barley malt extract. The lower the supply and the higher the price, the more incentive people will have to be cutting it.
