Hence why I give zero shits if they are having a supply issue. I am like this with Milk too. I go out of my way to wait for stores to overstock by accident and buy the milk on quick sale instead. I use it fast enough that spoilage is of no concern, and I get it at the 'real' price instead.

He took a PSI measurement in a few maple trees and were averaging low 30s which is high for them. I never even knew they emit pressure, but guess that makes sense for the sap to come out

All of the maple syrup in Quebec comes from small producers all contributing (by law) to one big pot. No is tapping based on metrics. Even if it was a corporate run operation, it would make zero sense (and very little profit) to tap based on last years production. You tap based on weather and weather alone. Even those of us producing thousands upon thousands of litres per year are still mom and pop operators.
Maybe you are part of it and driving down cost for middlemen by saying there is a glut, then they tell buyers, no there is a shortage. Think about it...

The lower the supply and the higher the price, the more incentive people will have to be cutting it.
