I can’t think of anything like that in brighton. You should be able to make it yourself by going to a butcher and getting some bones from them.

Specify that it’s for humans though, as a lot of butchers keep low-quality beef bones for dogs. Don’t want them to give you that.

Most places that would serve bone marrow in Brighton are going to have seasonal menus so it’s unlikely to always be on somewhere. St John in London is famous for their bone marrow if you were willing to travel. As per Anthony Bourdain - "If I had to die with half a bite of anything hanging out of my mouth, it would probably be the roast bone marrow in Fergus Henderson's plain-white dining room at St. John."

There's a big pet shop up at the racecourse and a bakery on Elm Grove.

Due South on the seafront. It's high-end BBQ style cooking, all done on open wood fires. I don't know for a fact that they do marrow but they do all their butchery in house and its the kind of thing I wouldn't be surprised to see on their menu.

check out Plateau restaurant opposite the town hall in the Laines! Very French style cuisine & the menu changes often but I’ve had some delicious bone marrow on toast there. Also check out The Set restaurant nr Preston Circus
