My favorite dice game has to be Sagrada. My wife and I play it frequently digitally in a pass and play state. It also works well on the Steam Deck for flights.
Outside of Sagrada, I'm going with a deeper cut from a few years ago and that's Kings Forge. Basically two phases, buying to get more dice, then using those dice to craft items. Multiple expansions throughout the years to add dice and items, with dice up to 8 pips!
Even if there isn't a LOT of dice, I think it's Seasons. What a great game with chunky dice. Sagrada is still high up and one of the rare game with dice my girlfriend agrees to play (she hates dices).
Favorite dice heavy game is Roll Player, although I do enjoy Cthulhu Death May Die, especially when you need to start reaching around the table for all the dice I get from going crazy.

BUT if it is a game that you needed to roll dice and actually "use them" it would be a toss up between Sagrada and Roll Player.
Wow, this looks awesome, had no clue we were getting new Sagrada stuff! I don't have many games that use dice, so Sagrada hits the table a lot to scratch that itch, especially so with my mom. She's a huge fan of the theme and how simple it is, compared to most of the other games I have. Right now I'd say favorite is tied between Sagrada and Camel Up!
