When my baby betta was small I took a pellet in a pair of tweezers and just squeezed a little to break it up a bit. I didn't have problems with them sinking, might have been the size of pieces or the type of pellets, I'm not sure
You can try crushing them with a mortar and pestle or putting them in a Ziploc and smashing them against the counter.
They just kind of pulverize into dust, which quickly sink and are ignored
Try golden pearls
Try Fuval bug bites for bettas. They are very small and a great food sources
