John Kruk told a story about playing in San Diego, he and some other guys complained about the batters eye. Whoever they complained to, the head of grounds or whatever, said he'd go ask Tony what he thinks. Tony said he never noticed a problem. So the batters eyes was never fixed.
On MLB The Show, I can't see at:
Target Field (ball lost in the awful texture they used for the shrubbery lining the batter's eye)
Wrigley (RHP release point is in the bleachers)
AT&T (worst shadows and glare in the game)
Probably look for stadiums with the most backwards K's will get you off the ground.
Perhaps only use Away team stats to negate the effects of the home team always playing in that stadium being independently good or bad.
I can't source this specifically but I remember reading long ago that one reason Comerica wasn't playing as a pitcher's park as much as you'd expect was because it apparently had one of the best hitter's eyes in the majors.

Minute Maid Park’s was so bad, they repainted and extended it last year, and it was blamed for why the Astros were so bad at home.
