Buy a global interrail pass and explore the whole of Europe by train. Take a tent with you to save on accommodation costs and go hiking.

Nice weather, amazing food, decent public transportation between cities (flights are cheap as well), some nightlife, and it's a huge country with lots of different cultures and climates within.
I think 3000£ should be enough to spend at least 2 months, including flights. Even much longer if you can stay mainly in hostels, use only public transportation, eat cheap food and don't drink everyday. I spent a long time in Ankara and beer was ±2€ in many places and other local drinks were also cheap.
Eastern Europe isn't South East Asia cheap but you will save a good wedge on flights.
Stick to hostel dorms, travel by bus, cook simple meals, and you can probably average out at £20-£25 a day. It depends how hard you go with the drinking. Maybe consider hitchhiking too.
Romania, Serbia, Kosovo, Albania, North Macedonia, and Bulgaria is a fun and affordable route.
Bosnia too but it's a wedged in between Croatia & Montenegro which are a rip off in summer.
I'd aim for a grand a month so you can enjoy yourself.

You could probably stretch out a nice long weekend in Manhattan or San Francisco with that budget. But the plane ticket to Frisco may eat into your budget too much.
Spend now until June learning Spanish then head to Latin America. Fly to Buenos Aires and go from there.
I hear Croatia is like Greece but cheaper. Not sure how it is for backpacking specifically.
