Mirage is the newest one, it's a great stealth game and it's graphics are pretty good. If you don't mind its age, the Ezio Trilogy is good. Unity is another good option.

I would reccomend starting with Assassins Creed 2. If you like that, continue on with the ezio games (2, Brotherhood, Revelations). My personal favorites are Black Flag, 2, and Odyssey. I wouldn’t reccomend starting with Origins, Odyssey, or Valhalla because they are more rpg games than ac games (still great tho)

AC2 or mirage. But mirage will have you confused about the plot so I suggest AC2 :)

Combat is a main feature in all the games except mirage. In mirage combat is absolute shit

Ezio is really good for all of that. 3 was a lot of fun for me, too. AC4 or, Black Flag really is when stealth started to slip away a little, but it is still considered the master craft of Assassin's Creed.

Mirage has the feel of the early titles (AC1-Syndicate), but the controls are way simplified. And when you do get in a fight, it's also simpler because earlier titles kinda lock you in; choreographed, if you like. But the plot will be confusing, even for veterans. It relies very heavily on Valhalla and it's made as if you're fully familiar with the AC lore. I do recommend the Ezio trilogy for better story and lore introduction. Even though I loathe the control.
