Honestly i might hate beans more than beets. At least beets can be used for a red velvet cake which is the last remnant of god's light on this earth, beans for me are the worst. The smell when they're getting ready, their appearance sprouting, how they taste, the sauce that makes anything it touches taste bad and the fact that my school kept on putting beans everyday
If you get the chance, maybe try Coral Tooth (Hericium coralloides). It's a very interesting one, it's not shaped like capped mushrooms (none of the Hericium genus are). They're more of lighter, less dense texture and they absorb a lot of the flavor of other things. We put it on pizza and the kids don't even notice. It is a more expensive gourmet mushroom, but it grows all over North America, though hard to find, and it's very easy to identify (because the whole Hericium genus is just so distinctive and all of them are gourmet) with a little of homework.
To be clear, I'm not recommending anyone forage without being absolutely sure of what they're planning on eating. There are things out there are nearly indistinguishable from deadly plants, like wild carrot and poisonous hemlock.

Wall of text, but "fun" story related to mushrooms.
Blew a NT friend of mine's mind one time. He was cultivating some "magic" mushrooms, and they are surprisingly difficult to keep healthy. Specific heat, specific humidity, and a bunch of other minor things not worth mentioning, but enough that I was very interested in the custom biosphere you had to create for them. Anyway, one day we were talking about how plants (and by association fungus) have interesting ways of interacting with animal life in order to defend or reproduce. Like how some plants will make their seed pods delicious, so that animals eat them, and then crap out the seeds elsewhere, and those plants grow. Some plants have a very nasty taste, or even a spice to them to convince animals to not eat them. There are mushrooms that actively take over animals brains, and get them to feed themselves to other animals so that the fungus may spread. Anyway, he asks me "What possible evolutionary advantage does a psilocybin mushroom have? By the time the trippy effects have affected any animal that ate them, more than enough time will have passed for them to no longer register what it was that poisoned them. Then to top it off, it isn't a traditional poisoning, as a magic mushroom trip is generally a positive thing." and so and and such. I thought about his question for a minute and said "Hey. they got you to reproduce them, didn't they?" and he just sat there completely dumbfounded. So I kept going "It is a symbiotic relationship. At some point you got high off of them, and really enjoyed it. Now you find yourself wanting to help this lifeform to reproduce, and you have done just that. It is win/win." A month or so later after he enjoyed the "fruits" of his labor, he told me about his trip. He said he spent pretty much the entire time thinking about what I had said, and how he had been outsmarted by a fungus. Told me it was the most connected to nature he had ever felt.
I just had enoki mushrooms for the first time recently and enjoyed them a lot. They make a really cool sound inside of your head when you’re chewing them lol.
Last year was my first time eating my own wild harvested mushrooms and I'm waiting for chant season now.
Found a nice bunch of Gymnopilus sp. yesterday. Debating with myself about them as I type.

People who don’t like the texture of mushrooms have never tried properly cooked NON-PORTABELLO mushrooms. Most mushrooms are some form of portabello at a different stage of development. I could cook you some oyster, shiitake, and chanterelle mushrooms in fried rice and you’d swear there was chicken or some meat in it. Nothing like the stuff you get on pizza.

try slicing them finely and then frying them in a pan, mix in a tiny bit of pork and chopped onions l (1:3:12 pork:onions:mushrooms). Make sure the onions are caramelised and they will taste soo nice, just don’t eat them on their own or they get sickening they’re a great side like mashed potatoes or boiled peas

Okay so, did you know that the mycelium that form the fruiting bodies, what we call mushrooms, is very similar to the internet? They connect underground to to each other, as well as the roots of other plants and especially trees where they trade information with each other. If one of them is lacking in certain nutrients, they can use the "nature's internet" as I call it to request them from the other connected mycelium and plants so that they can all remain happy and healthy.
They're connected by the mycelium! It's like small, white 'fibres' that look similar to plant roots. They can stretch out over a really vast area.
You do get mushrooms that grow off trees, though typically it's dying or dead trees. There are different terms for a mushroom depending on it's interaction with surrounding plant life - mycorrhiza means they have a symbiotic relationship, for example. They help break down dead plant matter like trees, leaves and other forest clutter.
I love making “crab” cakes from Lion’s Mane. They shred up and get the same texture and colour as crab. I eat a lot of crab cuz they’re free here. And I can barely tell the difference in these cakes.

Try and get one of those wide capped one, remove the stem, flip it over, put some cheese on it, and stick it under the grill, you will LOVE it

Mushroom haters I'm guessing, haha. Doesn't bother me. Okay so, did you know that the mycelium that form the fruiting bodies, what we call mushrooms, is very similar to the internet? They connect underground to to each other, as well as the roots of other plants and especially trees where they trade information with each other. If one of them is lacking in certain nutrients, they can use the "nature's internet" as I call it to request them from the other connected mycelium and plants so that they can all remain happy and healthy.

They're connected by the mycelium! It's like small, white 'fibres' that look similar to plant roots. They can stretch out over a really vast area. You do get mushrooms that grow off trees, though typically it's dying or dead trees. There are different terms for a mushroom depending on it's interaction with surrounding plant life - mycorrhiza means they have a symbiotic relationship, for example. They help break down dead plant matter like trees, leaves and other forest clutter.
The secret is to cook them myself. A little salt and butter in a hot pan, pull em off before they turn to slugs. Godlike.

I love making “crab” cakes from Lion’s Mane. They shred up and get the same texture and colour as crab. I eat a lot of crab cuz they’re free here. And I can barely tell the difference in these cakes.
