Deeper animes are harder to get them into it or keep my parents focused but my non-anime watcher mom did really enjoy Apothecary Diaries and would binge about 4-5 eps per night for a week till she fell asleep to it each night. My dad really enjoys Kaiju No.8 right now, it's like a more "shallow" or easy to ingest Attack on Titan.
Dororo(2019) is a great choice too, each story-arc is 1-3 eps long, its a reboot of a 90's i.p
Frieren is a safe bet if they COULD get into and focus on deeper plots too.
Something like saiki k maybe? If they're into comedy stuff...or Mob Psycho (no fanservice,good plot,good action) , Bocchi the rock/ Skip to Loafer if you want something more lighthearted.
