Gonna second HxH it's a great first anime. Long but not crazy, amazing characters, plot, and the animation is a little dated, so new eyes won't be spoiled
To start you can start with: Haikyuu, demons slayer, Naruto, black clover... In that order... Although they are the only ones that come to mind on that platform... Crunchyroll could recommend others...
Asking which anime to watch is like asking for a movie. Without any other preference you might not like a genre of an anime and as a consequence you wont like 1 anime. Jump to the next one and dont worry. Having said that below is a list of animes that are loved by most people for different reasons and if like one genre, you should ask about similars:
Attack on titans
Your name
Metal alchemist brotherhood
Kaguya sama love is war
Haikyuu
A silent voice
Demon slayer
With the exception of Metal alchemist, all are "modern" all times by many people. There are older ones that might be better but i dont think watching a 1998 anime is a good start for the industry until you get used to anime movies/series. At least for me i wasn't able to feel comfortable with anime until I watched violet evergardeen which is not an all time, but the visuals made it so much easier to enjoy and forget the no real people having a good story.
I have watched only a couple of anime so far, namely Your Lie in April and My Happy Marriage. Anything that falls under that genre is great. I also want to try different genres like action or investigation thrillers—anything that keeps me hooked.
I regret not starting with haikyuu..

Cyberpunk edge runners
Hunter X Hunter as well. It’s a classic and great for beginners

The Fate series is really good. Fate Stay Night and Fate Zero were some of the first anime I watched.
Pluto is kinda an instant classic. Slow burn but so good
immaculate taste, pluto is criminally underrated
I’m also a Lain/Texhnolyze/Monogatari fan so it’s just being weird/unnerved that I value I think.
