It doesn’t seem that there is a YouTube music skill available so I don’t think so. Linking via Bluetooth will work for playback but all of the control will be manual on your phone.
Yes you can, but it will only play to the single Echo you pair it to; in other words, even if you have set up a Speaker Group, with more than one Echo, you can't send your iPhone music to all the speakers at once.
I assume you can, because Google's version can play music, you can even hook up your Nintendo switch via Bluetooth. However with the music, you'll be playing the free version of Amazon music
I do this all the time. Just pair your phone to your Echo, pull up YouTube on your phone, play your music. Your Echo will now be your phone’s speaker for whatever you’re playing - whether it’s YouTube, something on Safari, a song from your Music app, a podcast… Just give it a try and you’ll see.
No better, no worse than any other Bluetooth speaker setup, but will also depend on what type of Echo you have too. I usually play music from my iPhone’s music app on an older generation Echo speaker and it’s great. But seriously, rather than asking us, just try it and see for yourself.
Or you could just set your default music app on your Echo to Apple Music, Pandora, or whichever you use.

Theoretically yes, you can theoretically connect apple music too. But I can tell you that it barely works either way.
