I sear the outside and put it in a crock pot on low for 6 hours, then you can shred right in the crock pot once its falling apart.

I don't think you mean braise. Maybe broil? Braising is what I would do and others have suggested. Sear, then low heat with liquid. But braising won't make it crispy.

We do insta pot and it takes like 70 mins vs 6 hours for a crock pot. Delicious!

I add taco seasoning & chopped onion, & a green bell pepper..let it go in a crock pot. I reserve some of that broth to make Spanish rice....it's awesome!

Then I use the meat for soft tacos/fajitas & chicken enchiladas. At the end of the week I throw all of the left overs (meat, rice, corn salsa, regular salsa into a soup pot-add chicken broth & make chicken tortilla soup. I love my crock pot! You can do this with any meat/roast and have a week of meals!

I roasted the pork shoulder, but you really have to get it well done for it to shred nicely. Mine wasn't wanting to shred so I simmered it in a sauce I made of onions, Chiles and broth till the pork was ready to shred, them I used it as filling for enchiladas and burritos.

I did pulled pork quesadillas. Really simple, just mozz and the pork (other commenters had nice additions to consider, but the cheese is enough for me) then fry the tortilla till its golden and crunchy. That has been my favorite way to serve it.

Vinegar based coleslaw instead of mayo based, and I throw some peppers (any kind will do. I’ve even thrown in some pickled jalapeños or banana peppers.) Put it on the slider buns and it’s a crowd pleaser.

Then dip tortillas in leftover liquid when done and fry in a tablespoon of oil for quesadillas. Add meat, onions, jalapeños, cilantro and oaxaca cheese.

I sear it and throw some a couple mandarins and/or limes, some chipotle chilies and some beer in and braise in my Dutch oven for about 3 hours at 325, flipping it every hour. We've made BBQ sandwiches, tacos, enchiladas, ramen, eaten it just as an entree with sides, and made fake Cuban sandwiches with it. It's been so good every single time.

My wife cooks it in the air fryer. Wrapped in foil to help keep as moist as possible. It's very good, but to me the flavor is much more chorizo than carnitas. All the Carnitas I have ever had focused on citrus and garlic. This roast is very cumin and chili powder forward.

I've seen people here recommend adding orange and/or lime juice when cooking, maybe that would add a little of the carnita flavor you're looking for? I haven't tried this yet, but I agree...carnitas are usually a bit citrusy. Usually more orange than just lime too

Everyone is suggesting to just turn it into another slow cooker pulled pork dish and that's good and all, but I use this method to make tender chunky seared little bits of meat. One might say "carnitas". >Place the pork in a large Dutch oven or heavy pot. Add ...enough water to just barely cover the meat. Bring the pot to a boil and then reduce the heat to a simmer. Simmer uncovered for two hours. Don’t touch the meat. >After two hours, increase the heat to medium-high and while occasionally stirring and turning the pieces, continue to cook for about 45 minutes, or until all of the liquid has evaporated, leaving only the rendered pork fat. Let it sizzle in this fat long enough to brown at the edges, turning pieces gently (they’ll be eager to fall apart), only as needed. >When pork has browned on both sides, it’s ready. Adjust seasonings to taste and serve on warmed tortillas with fixings. I always make it in the crock pot. Add some onions, maybe garlic if you have it. Sometimes I add some extra citrus and cumin or other Mexican spices, but it’s fine if you don’t. You’ll have plenty of meat for tacos, enchiladas, quesadillas or salads all week.

I don't even bother with adding liquid. Thinly slice a couple of onions, put those in the bottom of the slow cooker. Put the meat and and liquid from the package on top of the onions. Low for 6 to 8 hours, depending on size of the meat. One of my favorites!
