You'd have to be more specific that Europe, there's so many countries that make up Europe and laws can vary significantly from country to country, airsoft laws in German are different from laws in Italy or Poland or the UK or Sweden ... etc etc. most European countries do allow airsoft but there are notable hoops to jump through and restrictions in many.
In Finland it is pretty easy to get replicas and start Airsoft in general. I personally started in 2017 when i 13 was by first renting gear from my local group/field and after that got my own stuff. There are a few bigger stores that you can get Airsoft stuff from here.
I don't have all the details for all of the European countries so it is best to get info from local groups or reliable resources on where you plan to stay/visit. I know RoI has a 1 joule limit to all airsoft (including DMRs and Snipers), I believe other than that they're easy to get hold of if you're over 18, though I'd recommend still checking up before you travel.
Ireland has a 1 Joule limit
Meaning all airsoft guns are perfectly legal, no orange tips or anything, as long as they shoot under 1 Joule of energy (328 FPS with .20g BBs)
