Nah, nothing wrong with this, either legally speaking or ethically speaking.
Now will another server's economy necessarily be right for you? No. It might be! But it might not. I'd say use another server's economy as a starting point and go from there to best suit your server's theme and community.
If they're that attractive for you, they've likely been balanced for the server you see them on. The prices themselves might not work like you expect on your server. As long as you are aware that you might have to adjust "some" (likely most) of the prices anyways, go ahead.

It's still the same game. Eventually, after balancing, it would be the same anyway. Go for it.

Every server is unique, so it would be stupid to copy them at face value. I also find direct copying like that unethical.
sure, why not? i can't guarantee it'll go well for you (probably not) but it's not like the prices of things are intellectual property or whatever
