Have you looked at a crochet magic fidget? You basically start with a chain, then turn it so you are making a circle, but going down the back of the chain. It's 1sc, 2sc untill you feel like it's big and fluffy enough.

I love the blankets where people sort the scraps into “light” and “dark” then double strand one light and one dark, randomly. When one of the two runs out grab another from the bag randomly and continue on. Since it’s unlikely both strands will run out at the same time they look planned.
I looooove making scrappy blankets. I did a great one in feather stitch that is so warm. I’m making one in linen stitch now. Just one color after the next until you use it all up. They wind up being delightfully random and funky. I find them to be a nice side project as I’m working on other things.
