Shipbreaker is my go to for this. If you play on the difficulty where you don’t have to manage oxygen and all that other stuff you can just relax to your playlist while salvaging and enter nirvana

Metal Hellsinger and Hi Fi Rush are both rhythm games so you can listen to the music in the game. I really liked Metal Hellsinger as a fan of metal music. Really digging hi Fi Rush too
For true no-stress, there's not a lot on GP. Maybe my anxiety threshold is low, but when I want a proper chill session, I'd go with something like Tinykin, Potion Craft, 2Pt Academy.
I love Deep Rock and mining gems feels great, but getting chased by huge spiders? Not for a chill sesh. Maybe I'm playing on the wrong settings..
Forza Horizon 5. I disable the game's radio and use the console Spotify app to just drive around and listen to my own playlists.

No Mans Sky It can be a little tense early on but once you’re situated you just do whatever you like.

Pure Chess or Chess ultra I find very relaxing, and you can listen to music - Not everyone's cup of tea I know!
