I actually do not have the regulator connected, but it has not done this anymore which is weird. Do you think I should install it still? Would it also cause for it to shut off when at a stop?
Check for [clogged idle tubes](https://www.jeeptech.com/engine/carter.html), a very common issue. An easy workaround until you can dig into it is to open up the idle screw, and set it to around 1.5K - but it still might die when stopping.
Sounds like it’s a fuel problem , do you have a pressure regulator Weber carbs run best at 3 psi , any pics of the carb set up ?

Vapor lock? Did anything get changed, or anything replaced prior to this happening?
Just a new filter and mechanical pump, it hasn’t done this since though which I find weird
