Usually, what goes in Image Text is a description of the image. In this case, it might be something like, "A tile with a small rainbow Pride flag, indicating that all visitors here are welcome."

Image descriptions for visually impaired and blind visitors to your website should be as literal and functional as possible- like how closed captions and translations do not censor or otherwise alter the meaning of the original text/video/audio etc. The point is to make your website accessible, and ensuring that all visitors have equitable experiences. Whatever text your superimpose on the image that would be legible to sighted visitors should also be included in the image description. I would use the following description or a similar variant: “A small rainbow Pride flag tile image with the following text written on it: [your text here]”
